I try to eat as seasonally as possible and I really surprised myself when I made two amazing things from the humble, winter butternut squash. I have been reading all sorts of articles on pumpkin milk/juice benefits and if you’re a Harry Potter fan, I’m sure Hogwarts School of Witchcraft and Wizardry would approve of my butternut juice dessert smoothie (it might shake things up from the pumpkin juice the students seem to like there). Because of its magical sedative properties and the sweetness of this smoothie, I thought it fitting to have this after it as a dessert in the evening or late afternoon. It’s also a good one to serve dinner guests as a digestif, if you’re looking for an alcohol replacement and to get their taste buds tingling!

BUTTERNUT JUICE DESSERT SMOOTHIE

Ingredients

  • Juice 1/2 squash or pumpkin
  • 1 cup almond milk
  • 1/2 frozen banana
  • 1 Tbsp almond butter
  • 1/4 tsp cinnamon
  • 1/4 tsp turmeric
  • Dash cayenne pepper

Optional

  • 1 Tbsp chia seeds (leave in the fridge for 10 mins so it thickens up)
  • Protein powder
  • Honey or stevia if you want it sweeter

Blend these all together in a blender and I like to use frozen banana’s because it give the smoothie a cool creaminess and dessert like texture.

How to make Pumpkin Juice?

  • Wash the outside of the pumpkin properly and peel the hard outer skin of the pumpkin
  • Deseed the pumpkin and cut it into small chunks (keep the seeds to one side)
  • Place the pumpkin in the juicer and extract the juice

But what about the seeds and pulp?

Make sure you keep the pulp from the juicer (it will keep in the fridge for a day or two) as I’m to post the recipe for the delicious butternut bread I made later in the week. With the seeds I like to bake them in the oven until they are crunchy and golden. You can then use these to sprinkle on salads, soups or eat them as a snack.

The benefits for your overall health are numerous and the juice contains vitamins B1, B2, B6, C, E and beta carotene; minerals such as potassium, phosphorus, calcium, magnesium and iron. It also contains carbohydrates and certain vital salts and proteins. It’s a medicine cabinet waiting to be consumed, especially in winter when we need all the extra nutrients to see us through the dark and colder nights. Thank you Mr Butternut for being so fabulous!
