Mushrooms with braised tofu – perfect for winter!
It’s all about mushroom love this week on the blog, first with my enoki mushroom noodle recipe, then my chat with the Livesey Bros and now my surprise mushroom dish of ‘Exotic Mushrooms with Braised Tofu and Vegetables’.
After speaking with the Livesey Bros they sent me some exotic mushrooms to test out – thank you! I love cooking, add to that wholesome ingredients and you can taste the healing benefits of the food you’re eating.
I think dish will knock your socks off, but first here’s another mushroom fact ~ With winter descending upon us in the UK, the colder darker days means less vitamin D for many of us, but don’t worry as light-exposed mushrooms are loaded with vitamin D, this enhances calcium absorption and bone strength (we all need that!).
What is braised tofu?
You can braise anything as it’s just a cooking term where you first cook your main ingredient on a high heat then finish cooking it in a liquid. By doing this technique with tofu it means you get a crispiness on the outside and soft on the inside texture.
Mushrooms with braised tofu recipe
- 1 punnet of mixed mushrooms
- 1x cup braised tofu
- 1Tbsp tamari sauce
- 1Tbsp coconut oil
- 1x red chilli (add more depending on how spicy you like it)
- 1Tsp sesame oil
- Drizzle honey
- 1/4 tsp cumin
- 1/4 tsp turmeric
- 1x large onion
- 1/2 broccoli
- 1x red pepper

Toppings: toasted almond flakes, hemp seeds, toasted sesame seeds and spring onions
You can use whatever vegetables you want with this recipe and I recommend choosing vegetables with different colours and what’s in season. I used these vegetables as it was what I had in my fridge at the time.
This mushrooms with braised tofu recipe is a great side dish that will impress your dinner guests or you can have it as a super light meal r yourself. It goes great with quinoa, noodles or shredded cucumber, just be creative ~ Enjoy with a big smile!
