Salads are a great way to add more nutritious greens into your life, they make your plate look more tantalisingly colourful and are so easy to whip up! With summer just around the corner, it’s time to include more salads again (hooray, I missed summer salads over winter). I love making this simple sorrel salad with cucumber, red onion, chives and yogurt, it’s so healing with a nice kick from the onions and lemon punch of the sorrel.

One of the reasons I love going to the farmer’s markets is because I’m always discovering new foods and I can see what’s in season. Recently I discovered Sorrel (hibiscus sabdariffa) which grows in spring and early summer. It’s easy to grow your little shield-shaped leaves of sorrel. You can also quiet easily find wild sorrel in any permanent pastures where chemical fertilisers and weedkillers are never used. The cultivated leaves are larger and softer, and although the young ones are great in salads, the mature leaves are too. Sorrel has a lovely lemon taste and will give you a continuous supply of zesty leaves for summer salads.

Ingredients

  1. 1/2 Cucumber
  2. 1/4 Red Onion
  3. sprinkle of chives
  4. Natural yogurt
  5. Sorrel leaves
  6. Salt & pepper
  7. drizzle of olive oil
  8. dash of positive thoughts

Method

It’s really up to you and your taste buds how much you add of everything, as I like the fiery spiciness of red onion, s tend to add a bit more. When I made this simple sorrel salad I had lots of chives growing in the garden, so added in a lot. I also just cut up the sorrel and added it raw on top, as I love the green colour and it has a lovely lemon tang and for me I used it instead of so squeezing lemon, I sprinkled sorrel. I made this salad as a side dish, as had a friend coming over for lunch and the main dish was a spicy stew, so it was a nice cooling alternative to balance out the stew spice. You can also experiment with other herbs and ingredients as the key is to have colour, fresh ingredients and to enjoy every meal with love and positive thoughts.
